This recipe was super yummy. I made a few modifications-I added a whole serrano pepper and 3/4 cup of sour cream to the filling for heat and extra creaminess, and used about half the amount of cheese called for. They turned out so good! I used the recipe for enchilada sauce that the author included and it was a great addition. It's so silky and it freezes well for if you have extra.

Hey gang, this was another good result! To start, I modify almost every recipe to make it a bit (or a lot) healthier, or if I don't like or don't have a certain ingredient. On this one I substituted parsley for the cilantro (which tastes like soap to me), swiss chard for spinach, and I halved the cheese. Also, instead of sour cream I bought some plain organic Greek yogurt for a topping. The recipe was easy and sort of fun. Using a rotisserie chicken cuts down on the prep time, so I opted for that. Here's a hint--Whole Foods makes a delish organic enchilada sauce! However, the recipe for homemade enchilada sauce attached to this recipe looks worth a try. Quick to bake and very yummy!
