I recommend doubling the amount of the herbs as well as the garlic powder if you’re going to add tomato sauce. Sweat your onions first then set aside. Sear both sides of the chicken on high heat until it’s golden brown, then add your tomatoes, onions, and 6 ounces of tomato sauce (I’ve found that roasted garlic and herb tomato sauce works best) and transfer to the oven. I usually pair it with angel hair pasta or thin spaghetti, tossed in butter and a little bit of grated Parmesan

This was such a wonderful dish. So different from other Italian dishes. Nice hint of sweetness. After experimenting with a few different changes, I sautéed chopped tri colored peppers in olive oil and minced garlic and the spices then added 1/2 cup of red wine and 6 oz tomato sauce ( most friends I cooked this dish for asked for more sauce) and cooked these together for about 3 minutes then added the tomatoes and other ingredients I threw the oven for 20 minutes while I seared the chicken. I nestled the chicken into the sauce and put cheese over each chicken to easily locate as well as keeping it moist. I heat in the oven for an additional 15 to 20 minutes.

Sooo good!! I have never liked tomatoes but was given some fresh tomatoes and decided to try this... I wish I had tried it sooner. Very easy to make, tomatoes break down and are sweet and tangy. Will make again!

This recipe was so easy to put together and very flavorful! My husband who doesn’t like tomatoes devoured it!! Our son loved it too, just not the tomatoes. Served it a top angel hair pasta. Will definitely make this again.
