it's super sweet but the cinnamon goes really well with the pineapple. the pineapple I used was a little over ripe so next time I'll use one that's just right and see how it turns out. I have to add in that this is my first time using a fresh pineapple. A whole pineapple fits on one cookie sheet but it is the whole thing so it makes a lot.
