  • 2 avocados (ripe)
  • 2 tomatoes
  • 100 grams prawns
  • 1/2 teaspoon chilli powder
  • 60 milliliters creme fraiche
  • 1/2 lemon
  • 25 grams mature cheddar cheese

    Directions

    1. Preheat oven to 220C Gas 6. Halve the avocados (but do not peel) and take out the stone. Scoop out the flesh using a spoon and cut into cubes.
    2. Deseed and dice the tomatoes. Mix the avocado and tomato with the prawns, chilli powder and creme fraiche. Add a squeeze of lemon juice.
    3. Grate the cheese and set aside. Spoon the mixture back into the avocado shells. Sprinkle with the grate cheese. Place on a baking sheet and cook in to the oven for 15-20 minutes. Serve with salad and crusty bread.
