A quick and flavorful entree, you simply must try this recipe for Baked Asparagus. Featuring white asparagus, the underground counterpart to our favorite green stalk, this vegetable dish makes a savory side. Baked in a creamy dijon mustard sauce, these white asparagus stalks are full of bright and savory flavor. This makes a great side dish accompaniment to grilled meat or fish. Green asparagus can be substitute for white asparagus, although we recommend using white asparagus if you can find it.
Ingredients
- 13 asparagus
- 2 eggs
- 2 Tbsp. cheese (fresh light, from Saloio, or similar)
- 1 tsp. Dijon mustard
- fresh thyme (to taste)
- fresh parsley (to taste)
- salt
- mustard
- ground black pepper
Directions
- Preheat oven to 180 degrees Celsius.
- Peel the asparagus with a potato peeler, then cook in salted boiling water with a few sprigs of thyme.
- Beat the eggs.
