Baked Apples with Coconut Meringue

  • 1 large egg white
  • 75 grams caster sugar
  • 3 teaspoons lemon juice
  • 100 grams desiccated coconut
  • 4 apples (large eating, cored, using an apple corer)
  • 4 scoops vanilla ice cream
  • 80 milliliters chocolate sauce

    Directions

    1. Preheat the oven to 325ºF. Using a hand mixer beat the egg white until stiff, gradually adding the sugar. Continue to beat for 3-4 seconds between each addition until smooth and glossy. Add 1 tsp of the lemon juice and gently stir to combine. Add the coconut to the meringue mixture and gently stir together with a spatula.
    2. Cut 12 thick slices from the apples. Place on a large baking sheet lined with parchment paper (you may need 2 baking sheets). Drizzle with the remaining lemon juice.
    3. Top each apple slice with 2 heaped tbsp of the meringue mixture and gently form a peak with the back of a fork. Transfer to the oven and bake for 15 mins. Serve warm with the vanilla ice cream and chocolate sauce.
