  • 1 onion (large, diced)
  • 8 ounces baby bella mushrooms (sliced)
  • 2 bell peppers (seeded and diced, color of choice)
  • 2 jalapeños (seeded and diced)
  • 28 ounces fire-roasted diced tomatoes (can of, including juice)
  • 1/2 pound ground pork
  • 1/2 pound chorizo (if you don’t like spice at all, just sub this for another 1/2 lb of ground pork)
  • 1 pound ground beef
  • 15 ounces tomato sauce (organic)
  • 1 tablespoon chili powder
  • 2 teaspoons smoked paprika
  • 1 cup chopped cilantro (or parsley if cilantro isn’t your thing)
  • 4 ounces green chilis (can of diced)
  • 1 tablespoon pure maple syrup
  • ground pepper
