- 1 lb. bacon (meaty, 14-16 slices)
- 1 avocado (ripe)
- 1/2 cup sour cream (Mexican crema or Greek yogurt)
- 2 limes
- 1 1/2 tsp. hot sauce (such as Chipotle Smoked Tabasco or Jalapeño Tabasco)
- 3 romaine lettuce (gem or 1 heart of Romaine)
- 18 large shrimp (deveined, peeled, and tails off)
- salt
- pepper
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1/2 tsp. granulated garlic
- 1/2 tsp. granulated onion
- 1/2 tsp. pimenton (or smoked paprika)
- 2 jalapeño peppers (seeded or not, if you like it hot, and finely chopped)
- 1/2 red onion (or small white, finely chopped)
- 1 clove garlic (grated or finely chopped)
- 1 pt. cherry tomatoes (quartered, or 2 heirloom tomatoes, chopped)
- 1 handful chopped cilantro
- 2 Tbsp. neutral-flavored cooking oil (or olive oil)
- 16 corn tortillas (6-inch)
