Unbelievably delicious. Added some butter at the end and didn’t have shallots but otherwise stuck to recipe. Best risotto I’ve ever made!

Really nice risotto, first time I’d tried the short cut method of using all the stock at once. Not sure it saved any time. I might try sautéing the mushrooms a little before adding the leek next time. All in all it was creamy tast treat.

Easy once you have everything assembled and tastes incredible. Changes slightly with different mushrooms used. Even my husband, who hates mushrooms, loves this dish. It’s so versatile; as a main dish, side dish, elegant, or as just comfort food.

Best risotto ever! I seasoned it with parsley, rosemary and thyme and used pancetta instead of bacon, but excellent recipe!

It was delicious. Added small bits of sweet potato, peas and chorizo. Be mindful of the salt in the stock (and or bacon). Definitely added to my favorites.

Delicious! I added a few tablespoons of butter at the end to make it creamier ...It tasted like a dish from a restaurant.
