These crispy, salty, and hearty quesadillas are stuffed with bacon, eggs, cheese, and avocado, making them perfect for a weekend breakfast — as well as a weeknight dinner. The oven makes it easy to whip up all four at once. The recipe is a Yummly original created by Angela Brassinga.

- 8 slices bacon
- 1 avocado (large)
- 2 green onions
- 4 burrito-size flour tortillas
- 1 1/2 cups shredded cheddar cheese
- sour cream
- salsa
- pickled jalapeño peppers

Directions
- Preheat oven to 400°F. Place a sheet pan in oven while it's preheating.
- In a medium bowl, whisk eggs and salt until well combined. Set aside about 15 minutes before cooking.
- Place bacon in a single layer in a large nonstick frying pan. Cook bacon over medium heat until evenly browned and crisp, flipping as needed, about 10 minutes.
