- 250 grams streaky bacon (cut into 1-2cm pieces)
- 1 kumara (medium sized, sweet potato or just use normal potato - cooked)
- 1 onion (large, sliced finely)
- 2 tsp. balsamic vinegar
- 2 tsp. soft brown sugar
- 1 tomatoes (large ripe, sliced, or 1/2 punnet of cherry tomatoes sliced in half)
- 1 handful fresh herbs (chopped roughly: basil, spring onions, parsley, thyme etc.)
