This is delicious! Even though I forgot to add the pesto before wrapping the bacon around the trout, which resulted in a less attractive final product, it didn’t reduce the taste at all! As a matter of fact, it could have enhanced the taste because the bacon is directly on the trout resulting in a flavor explosion! One tip: the last five minutes of oven time I used my broiler to crisp up the bacon! Yum!

I thought that this was the weirdest combination, but it is oh so delicious! I love it and it is easy to make!
