- 8 Anaheim chile peppers (the smallish ones work best, but Anaheims are generally rather large)
- 8 oz. cream cheese
- 4 oz. sharp cheddar cheese (weight grated)
- 3/4 cup minced onion
- 1/2 cup sweet red pepper (minced)
- 1 jalapeno (seeded and minced)
- 1 Tbsp. garlic (minced fresh)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. chile powder
- 1/4 tsp. hot sauce (I used chipotle flavored Cholula brand hot sauce)
- 16 slices bacon (NOT thick sliced)

Everyone enjoyed the delicious flavors. I'll definitely make the stuffed peppers again!

These are amazing! Very addictive . Everyone I have made them for loves them. I used nacho jalepenos rather than fresh. My suggestion is to cut the peppers in half lengthwise before stuffing it makes them easier to eat and less messy. Next time I'm going to try stuffing them with pepper Jack cheese. I give this recipie 6 stars. I'd love to find more recipies with aneheims and pablanos
