This was a wonderful and easy recipe! I cooked everything exactly as recommended. I have a decently hot oven, and I had to leave them in the oven at 425 for 20 minutes to get the bacon to have a bit of crisp just on the edges. My scallops were still slightly frozen in the middle when I put them in, and they cooked to perfection. Even my picky husband commented on how delicious it was! Another very successful recipe from Pioneer Woman!

The bacon wrapped scallops were wonderful. I baked them in the oven at 375 degrees. That method seemed to control the cooking process more, allowing the bacon to cook properly, but not over cooking the scallops in the process. I made the chili butter, and it was pretty awful. There was no real taste to it, so I did not put it on the scallops. The scallops were fine by themselves without it.

Oh, I made this for me and my bf, we loved them so much, we ate 4 servings and only ate a portion of our dinner!
