- 1 pork tenderloin (2.5 – 3 lbs)
- 1 pkg. bacon (Applegate Farms Hardwood Smoked Sunday)
- 1 chutney (Apple, recipe, see below)
- sea salt
- black pepper
- garlic powder
- olive oil
- 4 apples (small organic, peeled and chopped in to small pieces, I used Braeburn apples – it’s what I had)
- 1/4 cup rice vinegar (low sodium & low sugar)
- 1/4 cup coconut palm sugar
- 1/4 piece yellow onion (a large, leave as a chunk, do not slice)
- 1/4 tsp. cinnamon
- 1/8 tsp. ground ginger
- 2 pinches red pepper flakes
- 1 pinch nutmeg
- black pepper
