- 2 Hass avocados (ripe, skin and pits removed)
- 1 lime
- 1 tsp. salt (finely ground unrefined, adjust based on your preference)
- 2 cloves garlic (minced or pressed, my garlic press is one of my favorite kitchen tools!)
- 1/2 bunch cilantro (minced, about 1/2 cup packed)
- 1 shallot (minced, about 1/2 cup)
- 12 collard leaves (stems removed)
- extra-virgin olive oil (to drizzle)
- 1 lb. bacon
