- 4 cups milk (Plus dditional milk if needed, to bring the sauce to the right consistency)

- 1 lb. spaghetti (partially cooked, not al dente)
- 1 cup pasta water (the cooked, to thin and moisten the cheese sauce)
- 8 oz. cream cheese
- 3 cloves minced garlic
- 1/2 onion (chopped)
- 8 oz. cheddar cheese (shredded)
- 8 oz. mozzarella cheese (shredded)
- 1 Tbsp. chopped chives (or green onions, for the topping)
