  • 1 pound ground beef
  • 2 tablespoons horseradish sauce
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon oil
  • 4 slices bacon (halved)
  • 4 burger buns (halved, toasted)
  • 4 leaves lettuce
  • 4 slices beet
  • 1/3 cup mayonnaise
  • 1/4 cup light sour cream
  • 1 spring onion (sliced)
  • 1 tablespoon flat leaf parsley leaves (fresh, chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon lemon juice

    Directions

    1. In a bowl, combine ground beef, horseradish and Worcestershire sauce. Form into 4 burgers and chill until required.
    2. To make the herb mayonnaise, combine all ingredients in a bowl. Season to taste and chill until required.
    3. Heat oil in a frying pan over medium heat. Cook bacon for 2-3 mins, turning, until golden and crispy. Drain on paper towels and keep warm. Add burgers and cook for 3-4 mins per side, until golden brown and cooked through.
    4. Spread each toasted bun with herb mayonnaise. Sandwich together with lettuce, patties, beet and bacon.
