I tweaked the recipe slightly, i diced the bacon and cooked it off before adding diced onions and red peppers. I also boiled the potatoes for a few minutes and blanched the asparagus before adding it to the bacon/onion/pepper mixture. (Seasoning as I went)...I also used a cupcake pan instead of a large pan to finish the frittatas off. This was for portion control. My boyfriend loved it!! Next time I make this, I will add cheese to add more flavor

I thought this was wonderful. Did put a few""shavingss" of dark chocolate into the mix! This is what I have been doing for many years, to rave reviews. The chocolate does not affect the flavor, just gives it an added touch!
