I treated the cooking more like home fries (we like them with a little crunch) so it was finished in cast iron on the stovetop and cooked the eggs separate and it was really really good, definitely making it again, it would be great for a large group as well!

This is a real winner! I added potatoes with the sweet potatoes and added a bit more apple than the recipe calls for, but that’s it. Next time I might add some sausage and I’ll also double the recipe because everyone wanted more!

Great recipe- I scaled down the ingredients a bit as well and used some garlic in the pan when sautéing the onion and bacon. I also skipped on the maple syrup and used some salt, pepper, and red pepper flakes for seasoning. I topped it with avocado and dairy free sour cream.

Very good recipe. Since I cook for two, I scaled down the recipe and used pears instead of apples. Very sweet and savory recipe will make again.
