- 5 oz. baby kale (package, or you can use 5 oz. thinly sliced kale leaves)
- 1/2 tsp. olive oil (for brushing pan when you wilt the kale)
- 4 flour tortillas (8 inch or 10 inch size)
- 3/4 cup low fat mozzarella (grated, or slightly more if you like a lot of cheese; I used a low-fat mozzarella blend with 6 grams of fat in 1/4 cup)
- 1/4 cup light ranch dressing
- 2 tsp. Sriracha sauce (to taste, we thought 1 tsp. was hot enough)
