- 1 free-range chicken (or large organic, divided into quarters – breast & wing, and leg & thigh)
- 2 red onions (thinly sliced)
- 2 garlic cloves (crushed)
- 4 Tbsp. olive oil (plus extra for drizzling)
- 1 1/2 tsp. ground allspice
- 1 Tbsp. ground cinnamon
- 1 Tbsp. sumac
- 1 lemon (thinly sliced)
- 200 mL chicken stock (almost 7 ounces)
- 1 1/2 tsp. salt
- 1 tsp. ground black pepper (freshly)
- 2 Tbsp. za'atar
- 1 unsalted butter (generous Tablespoon, 20 grams)
- 1.75 oz. pine nuts (– a generous ½ cup)
- 4 Tbsp. flat leaf parsley (chopped)
