- 1 1/2 cups muscovado sugar (or substitute dark brown sugar + 2 T molasses)
- 1 1/2 cups sugar
- 1 cup sherry (I love Lustau East India Solera.)
- 2 eggs
- 2 1/2 cups all-purpose flour (I prefer King Arthur.)
- 2 1/2 cups whole wheat pastry flour (or substitute all purpose flour)
- 1/2 tsp. baking soda
- 1 tsp. canela
- 1/4 tsp. ground cloves
- 1/2 tsp. ginger
- 1/2 tsp. ground nutmeg (freshly)
- 1/2 tsp. salt
