  • 8 cups chicken stock
  • 4 stalks spring onion (roughly chopped)
  • 2 tablespoons fish sauce
  • 2 tablespoons cooking oil
  • 1 pinch salt (and sugar)
  • 1 pound noodle (dried rice vermicelli, soaked in warm water until soft and then cook according to instruction)
  • 1 bunch cilantro leaves (finely chopped)
  • 1 cup shredded cabbage
  • 1 bunch fresh mint leaves
  • 2 cups bean sprouts (fresh, briefly blanch in hot water)
