- 2 oz. dried shrimp (medium-size, soaked in water until soft and discard water and finely ground with a blender)
- 4 Tbsp. crab (paste in oil, it is labeled as bun rieu paste in Asian grocery store)
- 4 eggs (beaten)
- 4 Roma tomatoes (cut in wedges)
- 2 Tbsp. tomato paste (concentrated)
- 8 cups chicken stock
- 4 stalks spring onion (roughly chopped)
- 2 Tbsp. fish sauce
- 2 Tbsp. cooking oil
- 1 pinch salt (and sugar)
- 1 lb. noodle (dried rice vermicelli, soaked in warm water until soft and then cook according to instruction)
- 1 bunch cilantro leaves (finely chopped)
- 1 cup shredded cabbage
- 1 bunch fresh mint leaves
- 2 cups bean sprouts (fresh, briefly blanch in hot water)
