- 1 egg (farm fresh, or I use Trader Joe’s cage free brown eggs when my friend’s hens are being fussy)
- diced mushrooms (I prefer baby bellas)
- diced tomatoes
- 1 Tbsp. bacon bits (Hormel Real, or 1 slice of crispy bacon, check your bacon, some varieties are 2 points per slice…you want 1 point per slice!)
- 1 Tbsp. fat free ricotta cheese (I use Trader Joe’s)
- 1/8 cup egg whites
- baby spinach
- kale
- fresh ground black pepper
- non stick spray (Olive oil)
