I can eat tzatziki like a kid eats ketchup and I will say this was absolutely delicious and very close to the real thing. It’s a little more grainy than the yogurt version, but didn’t detract from it at all. Ramped up the dill, lemon and garlic as well as a healthy dose of black pepper. The lemon juice really delivers the tang. Make sure to soak the cashews. I soaked them 24 hours but then ended up changing our meal, so I rinsed and drained the cashews and put them in the fridge for a day and they were fine.
