  • salt (to taste)
  • 4 leeks (small, washed, trimmed, sliced)
  • 1 pound brussels sprouts (washed, trimmed, halved)
  • 4 tablespoons olive oil
  • kosher salt
  • 2 large garlic cloves (minced)
  • 2 teaspoons dried dill (optional)
  • 2 tablespoons balsamic vinegar
  • 1/4 cup blanched almonds (slivered)
  • 1/4 cup golden raisins (plump, packed, and plumped up in hot water....or add them to the quinoa liquid the last few minutes.)
  • 1 handful fresh flat leaf parsley (for garnish)
