- 6 nori (dried seaweed sheets, at least 8 inches wide)
- 1 Tbsp. cornstarch
- 2 Tbsp. water
- kosher salt
- freshly ground black pepper
- 1 Tbsp. flavored oil (garlic-)
- 9 oz. oyster mushrooms (clusters or maitake mushrooms, see headnote)
- 1 tsp. sriracha sauce
- 1/4 cup barbecue sauce (your favorite)
- 2 cups cream (cashew, see notes)
- 2 roots (salsify, peeled and poached in equal parts white wine and water till tender, then minced, see headnote; may substitute small cooked cauliflower pieces; optional)
- 1/2 cup water (cucumber, see notes)
