- 1 Vidalia onion (large, trimmed and finely chopped)
- 4 oz. Hatch Green Chiles (mild or hot chopped fire roasted, drained)
- burgers (Santa Fe Buffalo)
- 1 1/2 lb. buffalo (ground, or 80/20 beef)
- 2 Tbsp. bacon fat (minced, trimmed before cooking if using ground buffalo)
- 1 tsp. ancho chile powder (ground)
- 3/4 tsp. fine sea salt (or kosher)
- 1/4 tsp. freshly ground black pepper
- 1/4 tsp. garlic powder (not garlic salt)
- 1/4 tsp. onion powder (not onion salt)
- 1/4 tsp. ground coriander
- 1/4 tsp. ground chipotle
- 1 slice queso fresco (mozzarella or Monterey Jack cheese)
- 8 bacon strips (cooked)
- lettuce leaves (tough stem ends removed)
- aioli (Green Chile, from above)
