- 3 handfuls kale (big handfuls chopped, I used lacinato kale, but use whatever kale you have)
- 1 cup cooked quinoa

- 1 cup chicken (shredded, use rotisserie or any leftover chicken you have)
- 2 Tbsp. barbecue sauce (plus extra for serving)

This meal was super easy to make and delicious! I made slight changes though. I used brown rice instead of quinoa and I used Franks Buffalo sauce for that extra kick instead of BBQ sauce. It even tastes good reheated!!

Oh man do I love when simple meals turn out great and great meals are simple to make. Great dish with it without bbq sauce. Glad I found it!

Used red onion. I decided to use multi grain medley that had quinoa in it. I added some black beans as well

Super easy and REALLY good. It is now in our regular rotation. I even make just side of Kale this way now without the Quinoa and chicken and BBQ sauce.
