- 1/2 lb. chiles (fresh árbol, or Thai chiles)
- 1 cup Newcastle Brown Ale
- 8 beef (bone, back rib rack)
- 1/2 cup rub (beef, see recipe)
- 1 cup spicy barbecue sauce (Tony’s, see recipe)
