I thought this was the perfect “low and slow” recipe for a winter day. I made two adjustments to accommodate what I had on hand: regular bacon rather than pancetta, draining off the grease after browning, and 2/3 c. 1% milk mixed w 1/3 c. half-and-half for the 1 c. whole milk. This dish is time-consuming but I was able to do other things while it cooked. I allowed about 3.5 hours start to finish, including 2-2.5 hrs simmering time. Whole family loved it…will definitely make again.

Simple ingredients but really tasty I follow the recipe exactly and this is my second time making it I use papardelle its fantastic!
