- 1 orange bell pepper (seeded and diced)
- 1 ear roasted corn kernels (cut off the cob - raw is fine, too)
- 2 cups cherry tomatoes (diced, regular tomatoes are fine!)
- 3/4 cup chopped cilantro (optional if you’re a cilantro hater; you could substitute parsley)
- 2 Tbsp. rice wine vinegar
- 2 Tbsp. apple cider vinegar
- 1 lemon (juiced)
- 2 garlic cloves (finely minced)
- 2 tsp. ground coriander
- 1/4 tsp. red pepper flakes
