  • 3 pounds lean ground beef
  • 1 yellow onion (large, chopped)
  • 1 jalepeno pepper (sliced, optional)
  • 1/2 green pepper (diced)
  • 14 1/2 ounces diced tomatoes (drained)
  • 38 ounces red kidney beans (dark, drained and rinsed)
  • 6 tablespoons chili powder
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ground pepper (fresh, to taste)
  • 1 cup v 8 juice
  • 1 cup tomato juice (I always use Campbells)
  • 1 pinch cayenne pepper (optional)
  • green Tabasco sauce (a couple of dashes each red and, optional, or to taste)
  • 1 can beer (or bottle, I have always just used Coors Light, a stronger flavored beer will result in a different taste)
