- 3 lb. lean ground beef
- 1 yellow onion (large, chopped)
- 1 jalepeno pepper (sliced, optional)
- 1/2 green pepper (diced)
- 14.5 oz. diced tomatoes (drained)
- 38 oz. red kidney beans (dark, drained and rinsed)
- 6 Tbsp. chili powder
- 1 tsp. dried basil
- 1 tsp. salt
- ground pepper (fresh, to taste)
- 1 cup v 8 juice
- 1 cup tomato juice (I always use Campbells)
- 1 pinch cayenne pepper (optional)
- green Tabasco sauce (a couple of dashes each red and, optional, or to taste)
- 1 can beer (or bottle, I have always just used Coors Light, a stronger flavored beer will result in a different taste)
