    A great combination but it desperately needed spice. Added jalapeños, cilantro, garlic powder and green onion. A bit more oil and more lime. A good core recipe. Thanks!

    I recently made almost the same sale but no oil and added frozen edamame! They thawed by the time we ate. Even my 1 and 5 year olds loved it!

    This easy, simple salad has been great for days when it's too hot to move! The second time, I added shredded carrots, sliced radishes and grilled tilapia. It is quickly becoming my go-to dish for when I'm at a loss of what to make for dinner.

    Instead of grape seed oil or canola oil I used bacon fat to toast the corn. Great flavor!

    Excellent. I changed the dressing to be one part lime juice to 3 parts good olive oil, and added a few healthy shakes of chipotle pepper to it. Also added cilantro the last time I made it. Yummy!

    Turned out great. I was running short on time so used canned corn instead. I did not mix the lime, salt and pepper...just added it in and stirred. I also put in a dash of red wine vinegar for a sweet kick. Yumm! Quick, easy, healthy.

    Very easy to make. Suggest to let the corn chill before adding the avocado and tomatoes. They will start to mesh and breakdown with the heat from the corn if added to early. Great salad dish!
