- 4 oz. cream cheese
- 1 avocado
- 1 chipotle in adobo
- 3 oz. pepper jack
- 2 Tbsp. fresh cilantro
- 1/4 cup red onion
- 6 egg roll wrappers
- oil (for frying, I used vegetable oil, about 3-4 cups)
- 1/2 cup plain yogurt (I use greek yogurt)
- 2 chipotle pepper in adobo (diced)
- 1 Tbsp. fresh cilantro (chopped)
- 3 Tbsp. salsa (prepared salsa, I use the fresh type you purchase in the refrigerated section if I don't have made salsa on hand)
- 1 Tbsp. fresh lemon juice
- 1 pinch crushed red pepper (start with ¼ teaspoon, then add more if you prefer it spicier)
