- 1 avocado (large, ripe)
- 3 cups lettuce (rinsed and shredded)
- 1 lime
- 1 Tbsp. olive oil
- 1/2 jalapeno (seeded, optional and minced)
- 1 Tbsp. parsley (minced)
- salt and ground black pepper

Directions
- Mix together the lemon juice and rind, olive oil, jalapeno, parsley, salt, and pepper in a small bowl.
- Place the lettuce in a salad bowl, add 1 tbsp. of dressing and carefully mix until evenly coated. Divide between 2 plates.
- Cut the avocado in half, remove the pit, and carefully separate the flesh from the skin with a spoon while keeping each piece in tact.
- Place the avocado on the lettuce and drizzle with dressing.
