  • 1 avocado (large, ripe)
  • 3 cups lettuce (rinsed and shredded)
  • 1 lime
  • 1 tablespoon olive oil
  • 1/2 jalapeno (seeded, optional and minced)
  • 1 tablespoon parsley (minced)
  • salt and ground black pepper

    Directions

    1. Mix together the lemon juice and rind, olive oil, jalapeno, parsley, salt, and pepper in a small bowl.
    2. Place the lettuce in a salad bowl, add 1 tbsp. of dressing and carefully mix until evenly coated. Divide between 2 plates.
    3. Cut the avocado in half, remove the pit, and carefully separate the flesh from the skin with a spoon while keeping each piece in tact.
    4. Place the avocado on the lettuce and drizzle with dressing.
