What to do with the ripening avocados....I was planning to make hummus when I saw this and I thought I would give it a try. I wasn't sure how it would turn out. I made it pretty true to the recipe except for the substitution of tahini with roasted sesame seed oil decreased garlic. I had pita chips...yum. I then then thought at this point it was neutral enough to turn it to more of a guacamole... As I still had one more avocado, lime and cilantro. So I added away. I did not go all out in my guacamole trial, but I pulled out the tortilla chips... Yum. So I see a green avocado hummus in my future... Maybe substituting fresh lemon over the lime to the original recipe. I also see a healthy addition of protein and fiber, decreasing the total calories per serving for my guacamole in the future ....omitting the tahini/sesame oil and adding cilantro an extra avocado with a little extra onion/jalapeño/tomato chopped as preferred. I also just just use an old fashioned potato masher, as It is a easier clean up and I'm not a fan of over puréed avocado.
