  • 1 inch ginger (minced)
  • 3 cloves garlic (minced)
  • 1 head bok choy (stem and leaves separated, stem diced and leaves thinly sliced)
  • 1 bunch scallions (or green onions thinly sliced)
  • 1 tablespoon coconut sugar (or light brown sugar)
  • 1/2 tablespoon soy sauce (or tamari)
  • 1/2 tablespoon Sriracha sauce (plus more to taste)
  • 1/2 tablespoon toasted sesame oil
  • 1/4 teaspoon ground white pepper
  • 1/2 tablespoon rice vinegar (or other light vinegar)
  • 1 package wonton wrappers (circle-shaped, about 36 sheets or a recipe of homemade dumpling dough)
