- 1 piece avocado (removed from skin, discard pit and dice into small)
- 1/2 cup mayo (homemade, or your favorite store-bought brand)
- 1/2 cup panko bread crumbs
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup olive oil (see instructions)
