- 14 oz. extra firm tofu (excess liquid pressed out, and then cubed)
- 3 cloves garlic (minced)
- 1/2 inch ginger (piece of, finely minced)
- 1 red bell pepper (diced)
- 1 medium tomato (seeded and diced)
- 1 zucchini (small, diced)
- 1 medium onion (diced)
- 6 cups vegetable broth
- 1 cup unsweetened coconut milk
- 2 Tbsp. curry powder (your favorite, Blend, I used Jamaican Curry)
- 4 Tbsp. oil (your choice, I used Coconut Oil)
