- 2 squash (small or 1 large, any variety is fine, I used onion squash)
- 500 grams fresh mushrooms (assorted, chopped)
- 5 white onions (small, or 3 large)
- 1 pinch baking soda
- 20 sage leaves (fresh, sliced, plus another handful of whole leaves for garnish)
- 5 cloves garlic (crushed)
- 1/2 cup white wine (the more the better! it just depends how much you can spare)
- 20 grams wild mushrooms (mixed dried)
- 500 grams arborio rice
- 1/4 cup nutritional yeast
- 1 Tbsp. white truffle oil (cut this in half if you have the extra strong stuff!)
