- beef (cut into bite size pieces, washed, rinsed and drained 1 ½ kg / 3.30 lbs)
- red onions (sliced 3)
- shallots (1 ¾ cup)
- garlic (the smaller variety is best, around 1 cup, finely chopped 3 whole bulbs)
- ginger (finely chopped 3/4 cup)
- tomatoes (diced 2)
- green chillies (small, sliced 5-8)
- 2 handfuls fresh curry leaves
- 5 Tbsp. coriander powder
- 3 Tbsp. chili powder
- Garam Masala (Kerala, check out my recipe 1 Tbsp)
- 1 Tbsp. turmeric powder
- coriander leaves (fresh, A large handful)
- 12 Tbsp. coconut oil
- rock salt (to taste 1/2- 3/4 tsp)
