- 50 grams sugar (I use 30 gr)
- 110 grams unsalted butter
- 250 grams ricotta (whole milk, cow or sheep or mixed, I use both mixed because the cheesecake will be tastier)
- 250 grams mascarpone cheese
- 120 grams sugar (I use 100 gr)
- 1/2 vanilla pod (or 1tsp pure vanilla extract)
- 1 Tbsp. cornstarch (or potato starch)
- 3 eggs (separated)
- 1 pinch salt
