  • 1 1/2 vidalia onion (large sweet, diced small)
  • 1 1/2 red bell pepper (large sweet, diced small)
  • 1 can pimentos (morrones, fire roasted peeled pimentos diced)
  • 20 pimento stuffed green olives (small pitted, drained of the brine)
  • 8 cloves garlic (fresh, smashed or put through a garlic press)
  • 1/4 cup burgundy (or merlot wine, or a good white table wine if red is not available)
  • 1/4 cup curly parsley (diced fresh, try not to add the stems)
  • 2 bay leaves (large)
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 2 tablespoons apple vinegar
  • 1 can tomato sauce (i use hunts or delmonte, pure tomato sauce)
  • 1 packet Sazon Goya Seasoning (with culantro and achiote)
  • 3 sprigs fresh cilantro (diced)
  • 1/4 cup virgin olive oil (good, and an extra 2 tablespoons oil for the end)
  • 1 lime juiced (large)
  • 1/4 cup tomato ketchup
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon garlic powder
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon adobo seasoning (goya)
  • 1/2 cup broth (beef brisket)
  • 1/4 teaspoon pepper (cayanne, optional)
