- 175 grams tomatoes (/6oz, skinned and chopped)
- 1 tsp. tomato purée
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- black pepper
- 50 grams cashews (/2oz, pine kernels OR, chopped roughly)
- 2 Tbsp. tahini (rounded, light)
- 5 Tbsp. yoghurt (rounded , plain soya, eg Sojade)
- 1 Tbsp. lemon juice
- 1 garlic clove (crushed)
- 1 tsp. freshly chopped parsley (rounded)
- black pepper
- 175 mL soya (/6fl, plain, or coconut yoghurt, Sojade is very good, or CoYo for the coconut alternative)
- 4 Tbsp. fresh coriander (rounded, finely chopped)
