- 1 knob butter
- 1 onion (medium, finely chopped)
- 2 cloves garlic (crushed with salt)
- fresh herbs (your choice)
- 1/2 tsp. all-spice
- 1 aubergine (cut into chunks)
- 1 courgette (cut into chunks)
- 2 chopped tomatoes (x tins of)
- 2 Tbsp. balsamic vinegar
- 1 tsp. sugar
- 500 grams strong white bread flour
- 325 mL warm water (luke)
- 2 Tbsp. extra-virgin olive oil
- 1 tsp. yeast (fast action dried)
- 1 tsp. sea salt
- 2 tsp. caster sugar
- cheese (extra, your choice for the topping - i've used mozzarella, Lincolnshire Poacher, of course and a new goats cheese that has been made locally by a friend of a friend, it's called Yarborough Blue and it's gorgeous!)
