  • 4 eggs (poached)
  • 1 ounce Parmesan cheese (shaved)
  • truffle oil (to serve)
  • 4 baguettes (toasted, to serve)

    Directions

    1. Blanch asparagus in boiling salted water for 2 mins. Drain. Distribute between serving plates. Top with poached eggs. Sprinkle with Parmesan and drizzle truffle oil over top. Season.
    2. Serve with toasted baguettes.
