  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 1 cup chopped onion
  • 1 pound fresh asparagus (trimmed, cut into 1 inch pieces)
  • 4 cups chicken broth
  • 1/2 cup baking potato (chopped)
  • 1/2 cup baby spinach (or arugula)
  • asparagus spears
  • diced tomatoes

    Directions

    1. In a medium saucepan, heat butter and oil over medium heat. Cook onion for 2 mins, until softened. Add asparagus, chicken broth and potatoes. Bring to a boil then reduce heat and simmer for 10 mins, or until vegetables are tender. Remove from heat and stir in spinach to wilt. Purée soup then season. Garnish with asparagus spears and diced tomatoes.
