This one was a hit. We all love bacon! For an extra bacony taste, prepare as follows: 1. Cook the bacon in the frying pan, set bacon aside on a plate and keep the bacon grease in the pan. 2. Cook the asparagus in the bacon grease pan, set aside the cooked asparagus on another plate. 3. Cook the shallots in the remaining bacon grease, then add the arborio and stir until rice is translucent. From there you continue with the recipe as is, you just don’t need to use any other oil. Not the healthiest preparation, but it sure did taste great.

This was really delicious! Whole family loved it! I added a few extra seasonings but otherwise followed recipe. (I baked the asparagus in olive oil and seasonings separate about 15 min then added to the dish at end)
